We first had this super simple apple butter three years ago, courtesy of Ms. Guizzo. We bought 25 pounds of apples and made apple butter with them, and while that might sound a bit like apple butter zealotry to you, you’ll be a convert soon enough. This year we’re using a smaller batch of cameo apples from Washington.
Thinly slice 3 to 6 quarts of fresh apples. Put them in a crockpot on low for eight hours. (We left them overnight.)
Add 2 tsp cinnamon, 1/2 tsp cloves, and if you want, a cup of sugar (we like brown but white works too). Cook on low until the sugar caramelizes and it tastes good. (We skipped the sugar this time, but it does add an extra depth of flavor). If you’d like, follow instructions for canning, and can this in cute jars for part of a holiday gift basket.
