Whether you’re feeling a little under the weather, or you just want a quick, delicious way to warm up, there’s nothing more homey and comforting than matzo ball soup.
Buy a box of matzo ball soup mix (we like Manischewitz). In a bowl, whisk together 2 tablespoons vegetable oil and two eggs. Add a packet of matzo ball mix and stir. Put the bowl in the fridge to chill for 15 minutes.
Meanwhile, bring about ten cups of broth to a boil. After the mix has chilled 15 minutes, shape the mix into walnut-sized balls and drop into the boiling broth. Turn it down to a simmer, put a lid on, and let it simmer for 20 minutes.
Serve!
