This slightly sweet, rich dressing over spinach is one of my favorite recipes from my grandma’s kitchen. It’s so simple, yet so elegant, and the clean flavors of spinach come bursting through the nutty flavors of the tofu. This is another dish that’s supremely easy and deliciously rewarding.
In a blender, whirl together 1 box soft tofu, 2 T sugar, a little soy sauce and 2 tsp hon dashi powder.
Steam enough spinach for four bowls and plate the spinach. Spoon several tablespoons tofu dressing over each bowl. Keep leftover dressing in a covered container in the fridge for up to a few days.

- enough steamed spinach to serve four
