We first stumbled on Coava Coffee in Portland while looking for kitchen cupboard doorknobs at a shop around the corner. The coffee there was so amazing that even the not-as-enthusiastic-coffee-drinker of our trio insisted we go back to Coava when we came down to visit her this trip.
There were two options for pourover coffee. We tried them both. They were both very good.
The folks at Coava have come up with their own reusable coffee filter, which they make (or have someone make based on their design) and sell, which is very cool. The talented baristas time the pour of water over the ground beans, which they’ve also measured, and the whole operation sits on a scale, so it’s all very scientific, and not at all magical, even tho the drink that comes out in the end tastes like maybe there was pixie dust involved in at least part of the process.
