Black Truffle Mashed Potatoes – A Memorable Side Dish

Sometimes nothing goes better with dinner than a side of mashed potatoes. And, thanks to our friend Jessica, we have some black truffle oil that really makes this dish amazing. This isn’t a dainty side dish, but it’s great for special occasions and putting some meat on your bones.

Boil up 3 1/2 pounds mashed potatoes until they’re tender. Drain them, let them cool a bit, and peel them. Put the potatoes back into the same big pot. Add 1/2 cup mascarpone cheese and 3/4 stick butter. Mash thoroughly. Mix in enough milk to match the consistency you like. Mix in 2 tsps black truffle oil, season with salt and pepper, and serve.

This dish goes quite nicely with buttermilk fried chicken. Stay tuned!

Ingredients

  • 3 1/2 pounds medium sized Yukon gold potatoes
  • 3/4 stick butter
  • 1/2 cup mascarpone cheese
  • milk
  • 2 tsps black truffle oil
