Cherry Clafouti – A Deliciously Simple Dessert


If you can make a pancake, you can make cherry clafouti. In fact, even if flipping a pancake is a bit of a challenge, you can make cherry clafouti. You just stir together a simple batter, pour it over a pan with cherries in it, and bake it off in the oven. Easy, delicious simplicity.

Preheat the oven to 375. In a medium bowl, stir together 1/4 cup sugar, 1/4 cup flour, and a pinch of salt. Then stir in 3 large eggs, 1 cup of milk and 1 1/2 tsp vanilla extract. Stir just enough to mix it all together.

Butter a 9″ pie dish and layer a pound of fresh, pitted cherries on the bottom. Pour the batter over the top and pop in the oven for 50 minutes. The clafouti will brown and puff. Serve with powdered sugar on top and a few more cherries on the side.

  • 1 pound fresh cherries, pitted and cut in half
  • powdered sugar for the top
